This rocky road biscuit cake is a great way to get the little ones into the kitchen. We can't promise it's mess-free or calorie-free but we all need a treat sometimes (every day at 3.30pm to be exact). Tune in to HerFamily.ie for more cooking with kids and exclusive recipes in the HerFamily.ie kitchen. https://www.youtube.com/watch?v=prMXLLXJpzg Rocky Road Chocolate Biscuit Cake Serves 10-12 Ingredients: 250g chocolate 75g golden syrup 125g butter 150g digestive biscuits 115g Crunchie bars 100g mini marshmallows 100g white chocolate Directions: 1. Melt the chocolate in a pot over a bowl of simmering water. 2. Add the golden syrup and butter and stir to melt and combine thoroughly. 3. Place the biscuits in a clean bag and bash with a rolling pin to break them up. Don't bash too aggressively as you don't want them to turn to dust. 4. Using the rolling pin bash the Crunchies in their wrappers (this contains the mess). 5. Add the biscuits, marshmallows and Crunchies to the melted chocolate mix. And stir together. Pour into a lined 8" spring-form cake tin and press down with a spatula. 6. Melt the white chocolate in another bowl over the simmering water. 7. Make a piping bag by filling a freezer bag with the white chocolate and snipping the corner. 8. Drizzle the white chocolate over the biscuit cake and allow to set completely before cutting.
