Fancy something that is simple to make but really tasty? Well, look no further, we have the recipe for you. Courtesy of Manor Farm, here is exactly what you need to produce a delicious chicken casserole. The only problem you'll have is that your nearest and dearest will probably want you to make it again!
Prep Time: 10 mins Cook Time: 90 mins Serves: 4-6 Ingredients:
  • 1kg Manor Farm chicken thighs and drumsticks, lightly coated in flour
  • 1 tbsp olive oil
  • 75g bacon lardons
  • Salt and black pepper
  • 2 garlic cloves, chopped
  • 1 onion, chopped
  • 1 leek, trimmed and chopped
  • ½ a head of celery, chopped
  • 300g turnip, peeled and chopped
  • 2 carrots, peeled and chopped
  • 500ml chicken stock (made with two stock cubes)
  • 1 tbsp fresh thyme leaves
  • 1 bay leaf
  • 800g baby potatoes, peeled and halved

1. Preheat the oven to 200˚C/180˚C fan/gas mark 6. Heat the oil in a heavy, ovenproof casserole dish over a medium-high heat. Add the chicken and lardons. Season to taste and cook until browned. 2. Add the garlic, onion, leek, celery, turnip and carrots. 3. Pour in the chicken stock. Add the thyme, a pinch of salt and pepper and the bay leaf. Stir to combine. 4. Add the potatoes and bring to a simmer. Cover with a lid, transfer to the oven and cook for 1½ hours until the chicken is tender. Remove the bay leaf before serving. Per Serving 435kcals, 15.7g fat (4.3g saturated), 27.5g carbs, 5g sugars, 45.4g protein, 6.1g fibre, 0.59g sodium
